(Pastinaca sativa) Hollow Crown is a reliable favorite with an outstanding flavor. Long, tapered white roots have a tender texture with a sweet, nutty flavor. Best harvested after frost, which causes the roots to convert starches into sugar. Excellent roasted or mashed.

Mature roots are 12" long and 3" thick. Does best in deeply prepared soil.

Planting Instructions:
Sow outside in spring, at least 4 months before fall frost. To aid germination, soak seeds in water for 12 - 24 hours before sowing.

Additional Tips:
Parsnips do best in well-cultivated, loose, weed-free soil. Loosen the soil to a depth of 2 feet and remove rocks and clods.

Parsnip can be slow to germinate. Keep the area watered and undisturbed as it may take up to two weeks for seeds to sprout. Be patient!

Parsnip leaves can cause an allergic reaction for some. Be sure to wear long sleeves & gloves when working with them.

Harvesting:
Parsnips can be harvested before winter, but the roots taste sweeter if they're left in the ground until after the first hard frost. They can also overwinter by covering them with a 2-inch layer of mulch. Harvest the roots as needed throughout winter and spring by digging them up with a shovel or garden fork being careful not to cut or damage roots.

Companion Plants:
Plant with cucumbers, onions, leeks, lettuce, peas, radishes, sweet corn, tomatoes.
Avoid planting with celery.
